Lay Day Roasters was born in 2024 in West Bayside of Portland, Maine with a commitment to roasting top-notch coffee, inspiring a keen and relaxed lifestyle, and staying true to its roots.

Lay Day is anchored by freshly roasted coffee offered wholesale, retail, or as an online subscription. Our emphasis is on bringing out the rich complex flavors of coffee from all over the world, delivered to customers affordably and sustainably.
LIFESTYLE
Our business only begins with coffee. Events, merch, and community partnerships are in Lay Day’s DNA. Our roastery will include public and private events with an emphasis on community building. are just getting started, including gallery openings showcasing local artists, crafts markets showcasing local artisans, and of course coffee-centric cupping and tasting events. Our always-evolving merchandise taps local designers, giving both life and style to our brand. And, our partnerships with community groups elevate local makers’ goods, give local event planners with a space to host novel and exciting events, and support local causes in sustainability and resiliency.
rOOTS
With 4 years experience owning and operating a previous coffee business in Portland, co-owner Corey Koch has turned his sights towards roasting and growing Lay Day Roasters. He hails originally from Baltimore, but has made Maine his home.
With seven years of work in city planning here in the Portland region, Co-owner Cashel Stewart is not only extremely fond of the Portland coffee scene, but is very excited to grow his own venture. He intends to make Lay Day more than a coffee business, working with community partners to all succeed together. You’ll often find Cashel whipping his e-bike around and biting off more than he can chew.
